Easy to make, these yummy snacks will fight hunger pangs and bloat. What’s more, they are low on the calorie meter as well.
Cucumber sushi
FOR THE SUSHI:
- 2 medium cucumbers, halved
- 1/4 avocado, thinly sliced
- 1/2 red bell pepper, thinly sliced
- 1/2 yellow bell pepper, thinly sliced
- 2 small carrots, thinly sliced
FOR THE DIPPING SAUCE:
- 1/3 cup mayonnaise
- 1 tbsp sriracha
- 1 tsp soy sauce
HOW TO MAKE:
- Scoop out the seeds from inside the cucumbers until there is a hollow inside them.
- Push in the sliced avocado into the cucumber center; use a butter knife to press down completely.
- Do the same with the bell peppers and carrots.
- Ensure that the cucumber centers are filled with the vegetables.
- Make a dipping sauce by stirring together the mayonnaise, sriracha, and soy sauce in a small bowl.
- Slice the cucumber into 1” pieces. Serve with sauce.
Bell pepper oven fries
FOR BELL PEPPERS:
- 2 bell peppers, cut into 1/2” rounds, deseeded
- 2 large eggs, beaten with 1 tbsp water
- 1 cup flour
- 1 1/2 cup breadcrumbs
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- FOR DIPPING SAUCE
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 2 tbsp ketchup
- 1 tbsp finely chopped parsley
- 1 tsp Worcestershire sauce
- Salt
- Ground black pepper
HOW TO MAKE:
- Preheat oven to 200°C and line a large baking tray with parchment paper.
- Mix the breadcrumbs with garlic powder, paprika, and salt.
- Dip the bell pepper rings in the flour, ensuring they are coated well. Dip into the egg and then in the breadcrumbs mix.
- Line the dipped rings on the baking tray.
- Bake at 200°C for 10 minutes. Turn them over and bake for 10 more minutes.
- Remove from oven when they are tender. Allow cooling slightly.
- For the dip, stir mayonnaise, sour cream, ketchup, parsley and Worcestershire sauce. Season with salt and pepper.
- Serve the warm fries with the dip.
