Indian Sprouts Salad

Indian Sprouts Salad

Ingredients

  • 180mg chopped celery
  • 140g sprouted lentil
  • 150g chickpea sprouts
  • 1 small cucumber, peeled, deseeded and sliced
  • 90g onions, thinly sliced
  • 90g dried apricot, diced
  • 40g baby spinach

For the dressing

  • 3 tbsp lemon juice
  • 3 tbsp olive oil
  • ½ red pepper, chopped fine
  • 2 tsp curry powder
  • 3 tsp honey
  • A pinch of salt and freshly-ground pepper

How to prepare

  • Mix the salad ingredients together in a salad bowl.
  • Stir the ingredients for the dressing together in a small bowl, and season it well.
  • When you are ready to serve, simply drizzle the dressing over the salad. Toss, and serve.

Carrot Methi Subzi

Carrot methi subzi

Ingredients

  • 2 cups carrot, diced
  • 2 cups methi leaves, chopped
  • ½ tsp cumin seeds
  • ¾ cup minced onions
  • 3-4 green chillies, chopped
  • 1 garlic clove, minced
  • ½” ginger slice, julienned
  • ¼ tsp turmeric powder
  • 2 tsp coriander powder
  • 2 tsp oil
  • Salt to taste

How to prepare

  • Heat oil in a wok or deep pan. Add cumin seeds.
  • When the cumin seeds crackle, add onion, green chillies, garlic and ginger. Stir for a bit on a medium flame.
  • After two minutes or so, add the methi leaves.
  • Saute this mix for another two minutes.
  • Add the carrots, turmeric powder, coriander powder, salt and a cup of water. Stir well, and simmer until the water is absorbed and the carrots are well-cooked.
  • Serve hot.
