Indian Sprouts Salad
Ingredients
- 180mg chopped celery
- 140g sprouted lentil
- 150g chickpea sprouts
- 1 small cucumber, peeled, deseeded and sliced
- 90g onions, thinly sliced
- 90g dried apricot, diced
- 40g baby spinach
For the dressing
- 3 tbsp lemon juice
- 3 tbsp olive oil
- ½ red pepper, chopped fine
- 2 tsp curry powder
- 3 tsp honey
- A pinch of salt and freshly-ground pepper
How to prepare
- Mix the salad ingredients together in a salad bowl.
- Stir the ingredients for the dressing together in a small bowl, and season it well.
- When you are ready to serve, simply drizzle the dressing over the salad. Toss, and serve.
Carrot Methi Subzi
Ingredients
- 2 cups carrot, diced
- 2 cups methi leaves, chopped
- ½ tsp cumin seeds
- ¾ cup minced onions
- 3-4 green chillies, chopped
- 1 garlic clove, minced
- ½” ginger slice, julienned
- ¼ tsp turmeric powder
- 2 tsp coriander powder
- 2 tsp oil
- Salt to taste
How to prepare
- Heat oil in a wok or deep pan. Add cumin seeds.
- When the cumin seeds crackle, add onion, green chillies, garlic and ginger. Stir for a bit on a medium flame.
- After two minutes or so, add the methi leaves.
- Saute this mix for another two minutes.
- Add the carrots, turmeric powder, coriander powder, salt and a cup of water. Stir well, and simmer until the water is absorbed and the carrots are well-cooked.
- Serve hot.
