SNACK HEALTHY AT WORK

Easy to make, these yummy snacks will fight hunger pangs and bloat. What’s more, they are low on the calorie meter as well.

Cucumber sushi

FOR THE SUSHI:

  • 2 medium cucumbers, halved
  • 1/4 avocado, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 1/2 yellow bell pepper, thinly sliced
  • 2 small carrots, thinly sliced

FOR THE DIPPING SAUCE:

  • 1/3 cup mayonnaise
  • 1 tbsp sriracha
  • 1 tsp soy sauce

HOW TO MAKE:

  • Scoop out the seeds from inside the cucumbers until there is a hollow inside them.
  • Push in the sliced avocado into the cucumber center; use a butter knife to press down completely.
  • Do the same with the bell peppers and carrots.
  • Ensure that the cucumber centers are filled with the vegetables.
  • Make a dipping sauce by stirring together the mayonnaise, sriracha, and soy sauce in a small bowl.
  • Slice the cucumber into 1” pieces. Serve with sauce.

Bell pepper oven fries

FOR BELL PEPPERS:

  • 2 bell peppers, cut into 1/2” rounds, deseeded
  • 2 large eggs, beaten with 1 tbsp water
  • 1 cup flour
  • 1 1/2 cup breadcrumbs
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • FOR DIPPING SAUCE
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 2 tbsp ketchup
  • 1 tbsp finely chopped parsley
  • 1 tsp Worcestershire sauce
  • Salt
  • Ground black pepper

HOW TO MAKE:

  • Preheat oven to 200°C and line a large baking tray with parchment paper.
  • Mix the breadcrumbs with garlic powder, paprika, and salt.
  • Dip the bell pepper rings in the flour, ensuring they are coated well. Dip into the egg and then in the breadcrumbs mix.
  • Line the dipped rings on the baking tray.
  • Bake at 200°C for 10 minutes. Turn them over and bake for 10 more minutes.
  • Remove from oven when they are tender. Allow cooling slightly.
  • For the dip, stir mayonnaise, sour cream, ketchup, parsley and Worcestershire sauce. Season with salt and pepper.
  • Serve the warm fries with the dip.
