Summer Salads
Super-simple, fresh salads that will help you cool down this summer. Make it for one or 10, make it to your liking.
Egg Salad with Beans
Blanch green beans; add to sliced radishes and hard-boiled eggs. Toss well with salt and paper. Dress with olive oil.
Beat Salad
Whip 1/2 cup vegetable oil with 2 tbsp sugar, a little lime juice, dry mustard, salt, chopped onion, and 1 tbsp poppy seeds. Stir in roasted beets and goat cheese.
Chicken-Mango Salad
Toss grated ginger with 1 tablespoon each of lemon juice and honey, and 1/4 cup olive oil; whisk well. Add shredded grilled chicken, greens of your liking and diced mango and toss well.
Classic Waldorf
Whisk 1/2 cup mayo and 2 tablespoons sour cream with chives, parsley, lemon zest and juice, sugar and pepper. Toss with chopped apples, celery, and walnuts.
Spicy Carrot Salad
Mix grated carrots and minced garlic in ¼ cup water; microwave until crisp. Drain. Make a dressing with lemon juice, olive oil, salt, red pepper flakes, and parsley, and toss the salad
Tomato-Peach Salad
Cut tomatoes and peaches into wedges and add thinly sliced red onions. Drizzle cider vinegar and olive oil over it and add sugar, salt, and pepper to taste.
Creamy-Crunchy Slaw
Stir in mayonnaise with cider vinegar and caraway seeds. Add shredded cabbage, scallion, green apple slices, crumbled cooked bacon, salt, and pepper.
